In the early stages give fluids only, not more than 200 to 250 gms at a time, at approximately two-hourly intervals to give about 3 litres in twenty-four hours. Most of these fluids should have a high-protein and high-vitamin content. If the patient has a sore throat take care to see that the fluids are not too acid or highly seasoned. Salt is important as much is lost due to sweating. It can be added to savoury fluids and to lemonade drinks. Very sweet fluids are not usually popular and can cause gastric upsets.

As the patient improves and appetite returns, some solids are added to give a semi-solid or soft diet.

Meal -Pattern for a soft diet

On waking:
Tea or fruit juice

Breakfast:
Sieved fruit or fruit juices. Cereals, milk, cream and sugar. Egg (excepting fried). Hard-boiled eggs should be mashed or chopped finely, bread rolls with butter or margarine

Mid-morning:
Milk drink orother beverage. Biscuit

Mid-day:
Soup or fruit juice.Meat or fish or poultry. Potato mashed or boiled rice, vegetables.

Tea:
Tea or coffee with thin bread and butter, cake or biscuit

Evening:
Soup, Egg, cheese, meat or fish dish. Fruit or pudding

Bedtime:
Milky drink, biscuit.

Lunch Menus

Recipe 1
Steamed fish and rice mould (for 4)

250 gms white fish fillet, 50 gms rice. 1 egg beaten, 30 ml milk, salt and pepper to taste, squeeze of lime juce

Boil The Rice
Mince the raw fish coarsely or chop it finely. Mix rice and fish with the other ingredients. Pour into moulds greased with olive/soyabean oil Steam for ½ hour or until firm. Turn out of mould and serve with a custard sauce.

Garnish of chopped tender lettuce

Recipe 2
Egg and Yogurt Mould

4 eggs hard-boiled, 1tbsp Worcestershire sauce, paprika pepper, 250 ml chicken stock, ½ tbsp gelatine, salt and pepper to taste. 50 gms yogurt, Coriander leaves to garnish

Separate yolks and whites. Sieve yolks and chop whites finely. Dissolve gelatine in stock. Mix yolks with Worcestershire sauce, paprika pepper, and stock. Chill. When just beginning to set, beat in the yougurt and add the egg whites. Pour into a shallow serving dish. Leave to set. Unmould Garnish with coariander leaves.

Tomato Concasse
Skin the tomatoes by plunging in hot water and then in cold water. Cut in half, and remove the seed. Chop the flesh and garnish the egg and yogurt mould along with coriander leaves. Chocolate cake.

Recipe 1
Cream of Spinach Soup

250 gms thick spinach puree, 500ml milk, salt and pepper to taste, nutmcg or cinnamon or chili flavourings to taste, 2tbsp chopped coriander leaves. Cook the spinach in a minimum amount of water, then put in an electric blender. Make up to 250 gms with some of the vegetable water. Add milk and boil lightly. Add coriander leaves. Add flavourings

Grilled Beckty

250 gms fish. Brush fish with oil. Grill lightly until brown on one side, trun and brown the other. Serve with lime juie and wedges of lime.
