Meal - Pattern for Those Afflicted with Colo-Rectal Disease

On Waking : Very weak tea

Breakfast : Cereal with milk and sugar or grilled white fish or kedgeree with soft hilsha roes. Bread or crisp toast, butter or maragarine, and preserves (guava jelly etc). Very weak tea with milk, or a little strained pulped fruit juice.

Mid-morning : 250 ml milk drink. Crackers.

Midday : Meat or fish or poultry, vegetables including potatoes. Fruit juice

Tea: Weak tea, cake or sandwiches or bread and butter/margarine or crisp toast.

Evening : Meat or fish or egg or cheese dish with vegetables. Or a thick soup and sandwiches. Fruit juices

Bedtime : Milk drink

Recipes Colo-rectal diseases need a low-fibre diet, though related medical conditions of the alimentary tract, such as constipation, need a high fibre diet. The following recipes for lunch and dinner are a compromise.

Lunch Recipe No 1 : (for Four)

Cauliflower with Hilsha Roe

1 large cauliflower; 60 gms margarine or 2 tbsp olive oil; 6 level tbsp plain flour; 250 ml cauliflower stock; 250 ml milk; 250 gms hilsha roe; lime juice; chopped coriander leaves; salt and pepper to taste.

Divide the cauliflower in sprigs and boil in lightly salted water. Strain and keep the stock. Keep cauliflower hot. Make a sauce with margarine/oil, flour, milk, cauliflower stock, seasoning. Boil for 5 minutes. Add hilsha roe and lime juice and re-heat. Pour sauce over the cauliflower and sprinkle with coriander leaves.

Crisp Toast, Lime pastry

Lunch Recipe No 2

Souffle Omelette with Tomato Sauce

6 eggs, 250 gms mixed cooked diced vegetables, 4 tbsp chopped corinader leaves, 25 ml ghee, salt and pepper, tomato sauce.

Separate yolks from whites and beat the yolks and water until thick and lemon -coloured. Beat the whites stiffly. Pour ghee into a pan. Fold egg whites into yolk and pour into the pan. Cook very slowly for 5 minutes until set underneath. Fold in half and turn on to a hot dish. Sprinkle with coriander leaves and serve with the tomato sauce poured over Crisp Toast; Lemon Tart.

Lunch Recipe No 3


500 gms onions; 60 gms olive oil; 250 gms small potatoes; 500 ml chicken stock, 125 ml cream; salt and pepper to taste.

Chop the onions and cook onions slowly in the oil without browning.Peel and dice potatoes, and add to the onions with water barely to cover. Add salt and pepper and simmer for 15 minutes. Add the stock and cook until potatoes are soft. Rub through a sieve, add the cream, salt and pepper . Can be served hot or chilled.

Lean tender lamb sandwiches

Dinner Recipe No 1

Fillets of Hilsha with Mustard Sauce

500 gms hilsha; 100 gams onions, 50 ml mustard sauce (kashundi)

Boil hilshah with onions. Place in a pan and stir-fry with the kashundi.

Creamed potatoes wit chopped coriander leaves.

Boil 500 gms potatoes. Mix with 125ml heavy cream and 6 tbsp chopped corainder leaves.

Fruit salad

Dinner recipe No 2

Stewed kidney

500 gms lamb kidneys, 250 gms thinl sliced leg of lamb, 500ml stock, 2 level tbsp tomato paste, 2 tbsp chopped coriander leaves.

Remove fat, skin, and tubes from kidneys. Cut kidneys and sliced leg of lamb into small pieces. Simmer for five minutes in the stock. Add the tomato paste, salt and pepper and thicken the liquid. Garnish with coriander leaves

Mashed potatoes with carrot puree.

Rice pudding (firni), Pomelo (jambura) juice.
