Diet for Convalescents

For patients recovering from emergency medical conditions and accidents , a diet for speeding up recuperation is required . This diet avoids very rich and indigestible foods and going easy on fried foods. Those with a small appetite will need varied and tempting meals with small helpings five to six times a day .
Meal Pattern:
On waking
Tea or fruit juice.
Breakfast
Fruit juice or stewed fruit .Cereal with milk. Eggs with toast and butter/maragarine and marmalade .Tea or coffee.
Mid-morning
Milk or lassi.
Midday
Soup
Fish or meat or egg or cheese dish. Potato and vegetables or salad. Pudding or biscuits and cheese and fruit. Tea or coffee.
Tea
Egg or cheese sandwiches, biscuits or plain cake.
Evening
Fish or cheese or egg or meat dish. Bread or potaoes or past or rice. Vegetable or salad. Stewed or fresh fruit. Milky coffee or tea.

Recipe No 1
Spanish omelette (serves 4)
6 eggs, 250 gms mixed cooked diced vegetables, 4tbsp chopped coriander leaves, salt and pepper to taste, 25 gms butter or olive oil.
Beat the eggs, add seasoning , and coriander leaves. Heat the butter /oil in pan and toss the vegetables in. Pour the eggs over the vegetables and cook, without stirring ,until the egg is brown underneath. Place in the oven or under the grill to set the top lightly .Fold over and serve.
Pineapple and lettuce salad.
Biscuit and coffee or tea.
Recipe No 2
Liver pilaf (serves 4)
100gms rice, 300gms lamb or chicken liver, 250ml chicken or lamb stock, 50 gms butter, salt and pepper to taste, coriander leaves to garnish.
Wash and drain the rice. Prepare the stock. Cut the liver into small pieces. Put in the the stock, and 25 gms butter, salt and pepper into a pan, bring to the boil, and add the rice. Stir and cook slowly Cook until the rice is quite tender. Dish in a mound or pack into individual moulds and then turn over on the serving dish .Heat the remaining butter in pan and toss the pieces of liver in it until lightly browned and cooked .Pile on the rice and surround with a garnish of coriander leaves.
Banana salad with lettuce and tomatoes.

Recipe No 1
Fish cocktail
100 gms tomato ketchup, 1tsp Worcester sauce, ½ tbsp lime juice, ½ tsp mustard sauce, 100 gms yogurt, 250 gms flaked cooked fish, 4 lettuce leaves, chopped coriander leaves.
Combine al the ingredients except the fish and lettuce. When well blended, add the fish and mix in gently. Chill. Wash and shred the lettuce and put in individual dishes .Place the fish on top of the lettuce and garnish with coriander leaves.
Mashed potatoes
Cheese and biscuits .
Recipe No 2
Veal casserole with tomatoes
500gms thinly sliced veal, 25 gms plain flour, 25 ml oil, 50 gms onions, sliced, 100 gms cooked tomatoes, jaitry- jaiphal, salt and pepper to taste.
Rub the flour, salt and pepper into the meat. Heat the oil and brown the meat with onions. Put meat and onions in a casserole with the remianing ingredients .
Cover and simmer until tender, adding a little water to keep the meat moist.
