Shrimp with Lettuce (serves 4)

Eating shrimp with lettuce is said to clear skin problems, rendering the skin smooth and elastic.

½ kg fresh shrimp, cleaned, peeled and deveined; 1 egg white beaten; 1 tbsp cornstarch; ½ tsp salt; 1 ½ tsps minced ginger; 2 spring onions, minced; 12 leaves lettuce; 2tbsp cooking oil; 1tbsp water; 1tsp sesame oil

Mince the shrimp and place in a bowl with the egg white, cornstarch and salt. Mix well. Mix the ginger and spring onions in another bowl. Clean and trim the lettuce leaves. Arrange lettuce leaves on a serving plate. Heat the cooking-oil in a frying pan. Place the shrimp-egg mixture along with the ginger -spring onion mixture. Stir -fry over medium heat for 2 to 3 minutes. Add 1tbsp water and stir. Stir in sesame oil and remove from heat Arrange shrimp on the lettuce leaves and serve.

Coriander Chicken(Serves 4)

The dish nourishes the skin, rendering it soft and shiny.

½ kg chicken breasts or drumsticks; 5 garlic cloves, peeled and split lengthwise; ¼ cup sesame oil; 5slices ginger; 1/3 cup soy sauce; ¼ cup malt vinegar; 1 tbsp sugar; 1 cup fresh coriander leaves.

Chop the chicken and place in a bowl. Heat the sesame oil in a pan. When the oil is hot drop in the garlic and ginger and stir for 10 seconds. Add the chicken and stir-fry for 2 minutes over high heat. Add soy sauce, vinegar and sugar. Reduce the heat, simmer over a low flame for 30 minutes, stirring occasionally. Add the coriander leaves Simmer for one more minute and serve.
